Chili is a great heart-warmer on those cool evenings sitting around the camp fire and can be easily prepared and cooked in a single pan on your heat-source of choice (stove, bbq etc).
You should either vacuum-pack your mince and keep it cool in an esky, or have access to a refrigerator to keep it from going off.
What you will need:
- An onion and some garlic
- 2 teaspoons of cumin
- 1 teaspoon of paprika
- Chilli-powder to taste (0.5 – 2 teaspoons)
- 1 Jar of tomato based pasta sauce
- 1 can of red kidney beans
- 500g beef mince
How to cook it:
- Soften the onion and garlic in a pan
- Add in the dry spices
- Add the mince and fry until cooked
- Add the pasta sauce and kidney beans
- Sit back and let it simmer for half an hour, remembering to stir every once in a while
Serve with a couple of buttered crusty rolls and enjoy!
Quick tip: There’s no need to bring all your spice jars with you when you go camping, if you are planning your meals ahead simply prepare a zip-lock bag with all the spices for each recipe. This is a great way to save space!
